Salmon spinach risotto

Italian food is one of the “super star” food in our home. Few reasons: it is easy (I could easily delegate the cooking to my husband when I am time poor), simple (because it requires few ingredients) and delicious (even my fussy eater loves it!).

For anyone who wants something delicious but need something in hurry, this recipe might be for you šŸ™‚

Salmon Spinach Risotto (serve 3-4)

Ingredients :

250 gr salmon

1.5 cup Arborio rice

1-1.5 litre vegetable stock

A handful of spinach

2 cloves garlic (diced)

1 medium size onion (diced)

Parmesan cheese


Salt & pepper

How to:

1. Season salmon with salt pepper and squirt of lemon juice. Leave them for 15 minutes. Prepare the pan. Cook the salmon skin on the bottom for about 7-10minutes. Turn on the other side for about 5 minutes. Move the cooked salmon on a plate, reserved the oil from the salmon. Chill. Once cooled, using a fork, “break” the salmon into chunky parts.

2. Meanwhile, using the reserved salmon oil, pan fried the diced garlic and onion until translucent (2-3minutes). Add rice, stir, pour in one cup of vegetable stock, stir and ensure the liquid are absorbed by the rice before adding more liquid. Ensure you add one cup at a time. Once you are happy with the texture, add salmon, spinach, parmesan cheese, parsley, salt and pepper. Serve.
