Bitterballen is Dutch influenced food, which are basically round balls made out of mince meat (either chicken, veal or beef), butter, flour (to make roux) and seasonings. But this time, instead of using flour I made them with rice. They are similar to Italian meat balls -arancini in ingredients but also easy to make, a good way to use up left over and great for snacks/ lunch boxes for the whole family.
250 gram chicken breast / thigh, poached, diced/shredded finely
1-2 cup steamed rice
1/3 cup cheddar cheese and/or parmesan
Carrot / zuchinni – chopped finely
salt , pepper
For coating: panko breadcrumbs, 1x egg and all purpose flour
Mixed chicken, rice, cheese, vegetables. Seasoned to your liking. Check taste. Add egg. Mixed all together.
Roll them into bite size balls. Coat them in all purpose flour , then egg and lastly panko breacrumbs.
Heat oil in a frying pan (you can either pan fried / deep fried). Cook in medium heat until golden brown and/or cooked through.
Serve with tomato sauce and mayonnaise.
Note: When adding eggs, do it gradually to ensure that the rice mix is not too runny and you can roll them into balls.
