One of my favourite place to find inspiration for cooking is fish markets. It reminds me of those time when we go to local fish mongers during our visit to Dad’s prawn farm. You would see different type of fish that are not usually sold in our local supermarket. We would go home with our big bag of seafood and start thinking of endless dishes that could go into our weekly menu.
Prawn is one of my favourite meat to cook as few cooking ingredients are sometimes enough to compliment its already sweet and delicious flavour.
Garlic & Honey Prawn
700 gram banana prawns
3 cloves garlic , finely chopped
1/4 cup honey
1-2 tbsp lemon juice
1 tbsp rice wine/ mirin (optional)
Salt and pepper to taste
Oil to pan fry /bbq
Finely chopped green shallots / parsley
Mix all in one bowl, marinate and leave it in the fridge for minimum 30 minutes. Heat up your bbq plate or frying pan. Add a bit of oil. Cook the prawn in batches approximately 2-3min each side. Remove from the heat, serve with finely chopped green shallot/ parsley.
